:00 Intro + Monday – Protein Muffins
2:27 Tuesday – Spinach Breakfast Wraps & Shake
3:37 Wednesday – Bagel thins and cereal
4:35 Thursday – Breakfast Sandwich
5:47 Friday – Vegan Omelette & Iced Espresso

MONDAY
Protein muffins
Sourdough with vegan Boursin
Watermelon

Muffin recipe
1 cup (120g) almond flour
1 banana (about 100g)
60g vegan protein powder (both unsweetened or vanilla)
3 tbsp (45g) maple syrup
10-12 (125g) strawberries
2 teaspoons baking powder
1 teaspoon vanilla extract
1 cup + 2 tbsp (270ml) nondairy milk

Bake 350F for 25 mins, then 375 for 5 minutes

TUESDAY
Just egg
Spinach
Trader Joes carb savvy tortillas
Vegan Boursin
Shake with chocolate protein powder, nondairy milk, chocolate nondairy milk, ice

WEDNESDAY
O’doughs every thing bagel slim with avocado and vegan Boursin
Protein cereal with ripple milk

THURSDAY
Bagel skinny
Just Egg
Plant Centered Mia carpaccio
Observe Your Heart vegan feta

FRIDAY
Just egg omelette with purple onion, spinach bell pepper, vegan Boursin, vegan carpaccio
Watermelon
Iced decaf coffee with Trader Joes Brown Sugar Oat Creamer

    I love the breakfast bagel and omelette breakfasts! If I had a cooked breakfast (or any breakfast) more often, those would be what I think I’ll love to have most often.

    The muffins look good☺ I bake with almond flour a lot b/c I like the flavor. I finally looked through "Plantiful" and it's beautiful! I really like the recipe index and all the pictures you included! I have my grocery list ready to go and can't wait to try the homemade mozarella, coffee crumb muffins and vegan omelette this week ~ YUM! Thank you for all the great recipes 😊

    Yummo! It all looks so good!!! Unfortunately in Canada we don't have many of those products but you've given me some ideas. I love just egg! I often buy it in the preformed "patties", I heat it up with some Chao cheese on top and put that between toast with a garlic mayo and tomato. Very good. I've never had success making it in the liquid form but I'll try your tips because I miss omelettes 😞
