Addictive Vegan Breakfast Ideas! (healthy -ish)

✨Ingredients and Notes ✨

#1 Shredded Sweet Potato with Homemade Vegan Ricotta

for the ‘cheese’:

2 blocks agency tofu (a full of 400g = 14.01oz)
3 tbsp corn starch
1 heaping tbsp nutritional yeast
2 1/2 tbsp olive oil
2 tbsp white wine vinegar
1 tsp salt, more if desired (I typically incorporate an additional tiny pinch)
½ tsp garlic powder
¼ tsp turmeric
½ cup + 2 tbsp non dairy milk (125ml + 2 tbsp)
1 handful of fresh new basil
1 handful of fresh spinach

→ enough ricotta for 4 servings

served 1 shredded, peeled sweet potato for each serving
1-2 tsp of olive oil
optional: 1 tsp vegan butter
seasoning, salt to flavor

also provide w cherry tomatoes, spring onions, toast …

#2 Chocolate Chip Tik Tok Style Baked Oats

1 cup oats, tiny lower (90g)
⅓ tsp salt
1 tsp baking powder
1/4 tsp cinnamon
1 tsp vanilla
½ cup non dairy milk (125ml)
2 tsp apple cider vinegar
3 ¼ tbsp applesauce
2 tbsp liquid sweetener
1 1/2 tbsp sunflower seed oil

2 tbsp chocolate chips, a person included into the combine the other sprinkled on best (or far more if you desire)

Bake for 25 – 30 min 180C in 2 smaller bowls or ramekins, if possible greased

→ serves 2

#3 Cinnamon-y Milkshake (aka Cauliflower Smoothie)

~ 1 ½ cups frozen cauliflower (130g)
3-4 dates, soaked and/or boiled
⅓ cup cashews, soaked and/or boiled (50g)
1 tsp vanilla
⅓ tsp cinnamon
2 tsp ground flax seeds
2/3 cup non dairy milk (160ml)
a pinch of salt
1 tsp unsweetened cocoa powder
2 tsp maple syrup

→ serves 1-2

#4 Chunky Monkey Breakfast Bowl

1-2 bananas, lower in 50 percent
1-2 tsp coconut oil or common oil or vegan butter
pinch of cinnamon
pinch of salt

bake at 200C for 25-30 min

provide with vegan yogurt, oats, walnuts, granola …

and this chocolate sauce below:

1 heaping tbsp almond butter
2 tsp unsweetened cocoa powder
1 tsp (chocolate) protein powder, optional
1 ½ tsp maple syrup or other liquid sweetener
1-2 tbsp non dairy milk, or more to modify the regularity if wanted
also pinch of salt

→ serves 1-2

#5 Healthful Full Wheat Oat Bread

300g entire wheat flour (2 ½ cups)
240g white spelt flour (1 cup)
1 cup modest slash oats (90g)
3 tsp salt
50g vegan butter at room temp = 1.76oz
1 ½ cups non dairy milk (375ml)
1 packet of dry lively yeast = 7g = 2 ¼ tsp
if essential a couple far more tsp of h2o or olive oil

a lil little bit of olive oil to brush the dough
a lil bit of non dairy milk or h2o to brush the dough right after growing
a sprinkle of flour for the major

→ make sure to allow the dough rise in either a bowl or ideal situation state of affairs inside of a loaf pan, that way it already achieves the bread-like shape!

bake for 45-50 min at 180 C

yields 1 big loaf of bread, reduce slices and freeze individuals!

    I made my own version of the cauliflower smoothie and IT IS AMAZING!!!! Here is my recipe, you won’t regret trying 😊

    -100-120 gr frozen cauliflower
    -100 gr applesauce 🍎 🍏
    – Some soy milk (sweetened one for extra sweetness)
    – 2 tablespoon of Nesquik powder (but you can add 1 tablespoon of cacao instead, I just ran out on cacao powder and used what is in my pantry instead)
    – 1 teaspoon of espresso powder to boost the flavor
    – Some cinnamon

    And that’s it folks! It was very very amazing, I definitely recommend trying to experiment with cauliflower smoothies and incorporating them to you diet
