Hey veg heads! Here’s a cheap, quick and easy vegan meal you can make start to finish in less than 20 minutes. Click the video to find out how!!
This was the first time we made this chowder and it was so incredibly tasty and nourishing. And for about 5 dollars it made 6 meals. Quick meal when you have nothing planned to satisfy the kids at supper time. Or throw in a couple fruits and some peanuts and you’ll be killing it in the lunch room!!
1 white onion, diced (3 cups)
4 cloves garlic, minced
4 ribs of celery, chopped (2 cups)
1 medium sweet potato, peeled and cubed (2 rounded cups)
1 red pepper, diced
4 cups frozen corn
4 cups vegetable broth
2 tsp chili powder
1 tsp paprika
salt & pepper, to taste

Add the onion, garlic and celery to a soup pot with a splash of water or vegetable broth. Cook for 5 mins until starting to soften.
Next, put the broth and sweet potato in, bring to a light simmer and cook for 5-10 minutes. 5mins worked for us.
Add the rest of the ingredients and simmer until the sweet potato is soft.
Remove about 2/3 of the soup and blend until smooth and creamy then pour back into the pot.
Salt and pepper. If you’d like.
Too easy eh?
You could also substitute the sweet potatoes for regular one. But cooking times may vary.
Also, next time I may blend the contents of the pot before adding the corn. I had some texture issues with having the corn blended. But not so many issues that it would overcome that savory spicy flavor.
