Making vegan waffles is much easier than you might think. Simply whisk in a few simple ingredients together, cook the dough in your waffle iron and you’re done. I bought mine second-hand and I can only recommend it, it never sticks!

These vegan waffles feature whole wheat and chickpea flour for a version that is high in protein and fibre. Feel free to use pretty much any flour of choice. The amount of sugar yields a very slightly sweet waffle. Use more or less depending on your preference.

1.5 cup whole wheat flour (50g)
0.5 cup chickpea flour (50g) (or more ww flour)
2 tbsp ground flax seeds (15g)
3 tbsp sugar, I use raw cane (45g) (optional, use more or less to taste)
1 tsp baking powder (3g)
pinch of salt (1g)
2 tbsp olive oil (25g) (optional but helps with texture)
1.5 cup plant milk (390g) (add more if needed)

Preheat your waffle maker.
In a large bowl, mix all the dry ingredients together. Add the wet ingredients and whisk until there are no more lumps. The mixture will be fairly thick.
If needed, oil your waffle maker. Pour in about 1/3 cup of batter in the center and close the lid. Do not peek or the top might separate from the bottom. Cook for around 6 to 7 minutes.
Serve with favourite toppings: plant yogurt, nut butters, jam, maple syrup, fresh fruit, nuts…

*You can keep the waffles in the oven, preheated to 200F (100C) and then turned off, on a plate lined with a clean tea towel.
