Just made this today Chef John. Made our own tzatziki and a maple tihini sauce we had left over from another recipe. It was absolutely delicious. Only thing I wish I had done was make our own pita bread. Gonna keep this recipe ready to go from now on.

You ruined it. NEVER add flour or baking powder or baking soda. You also over processed it which ruins the texture. This is a bad recipe, and this is why some people don't like falafel. It's not supposed to be bready. You really ruined it. Falafel is NOTHING but chickpeas, herbs and spices. NOTHING else. And you don't need to soak chickpeas for 12 hours either. 4 hours with warm water, sitting in a warm place, like on the back of the stove is the best for falafel. People like you give falafel a bad reputation.

One time, I tried making these into patties just like the video suggested, but when I put them into the skillet, they all melted and broke apart. Afterwards, I ended up with a pan of falafel soup. I don't think I would ever try making these again because it gave my entire house that Indian curry smell. To get the smell out, I had to leave my windows open all night and it was in the middle of the dead winter.

Because you're soaking the beans, can't you use canned beans instead and save the overnight wait?
