Ingredients:
1/2 pink onion
2 roma tomatoes
3 very long green chilies
3 tbsp olive oil
2 pinches of salt
1/4 cup curry leaves
1/2 tsp chili powder (cayenne)
1 tbsp sweet paprika
2 tsp garam masala
1 1/2 cups leftover basmati rice
number of sprigs cilantro
few lime wedges

Directions:
1. Dice the pink onion and tomatoes. Chop the chilies
2. Bring a non stick pan to medium heat. Insert the olive oil
3. Sauté the onions and chilies for about a minute
4. Add in the tomatoes followed by a pair pinches of salt. Sauté for a several minutes
5. Incorporate in the curry leaves and sauté for 4-5min
6. Increase in the chili powder, paprika, and garam masala (incorporate a couple splashes of h2o if it appears to be as well dry)
7. Increase in the rice and sauté for one more few of minutes
8. Garnish with freshly chopped cilantro and provide with a pair wedges of lime
