Paximadia is the Greek word for the double-baked cookies we all know and really like, Biscotti. This is a vegan recipe that generates the most aromatic cookies that are excellent for dunking in your espresso!

    TY sweet Dimitroula mou! You're exactly like me that like our biscotti on the slightly chewy side.I hate the crisp due to having tooth problems. I slightly under under bake them. My mom slightly under bakes her biscottis too. I'll definitely make these to indulge on for Lent.

    Delicious…thank you for sharing this recipe. Perfect since we are in Great Lent…we like them a bit soft as well πŸ™‚
    Only issue I had is when I was slicing them after I let them cool for 15 minutes they would break…maybe I baked a bit too long as you say ovens vary…will be making them again and again!! Thank you

    Your recipe uses the most liquid of all others I find. 2 cups liquid.
