Tempe Orek | Vegan Friendly Traditional Indonesian Soybean Snack

500g tempe, cut into small strips
¾ cup blanched peanuts
2 red chilli, sliced
6 cloves garlic
2 shallot
2 tsp coriander seed
2 tbs water
1 tsp salt + 1 tsp sugar
¼ tsp salt + ¼ tsp sugar
2 tbs sweet soy sauce
Vegetable oil

Fry tempe in vegetable oil on medium heat for 15 mins until crispy.
Remove and drain.
Fry peanuts in the same oil on medium heat for 3-4 mins until crispy.
Remove and drain.

Blend garlic, shallot, coriander, and water into a paste.
Pour out most of the oil from the wok and reduce to low heat.
Add paste and fry for 2-3 mins until fragrant.
Add salt and sugar (1 tsp) and stir through.
Add chilli and fry for 3-4 mins.
Add fried tempe and peanuts and mix well.
Add sweet soy sauce and mix well.
Turn off heat, add salt and sugar (¼ tsp), and mix well.
Allow to cool before serving and store any remainder in airtight container.
