Ingredients that you may have never used or heard of:

Nutritional Yeast: https://amzn.to/2KYPTde Can also be found at Walmart, Whole Foods or any well stocked market

Ground Flax Seed or Flax Meal: https://amzn.to/2OpIqG3 Can also be found at Walmart, Whole Foods or any well stocked market

Ground Chia Seed: https://amzn.to/2KZ9idM Can also be found at Walmart, Whole Foods or any well stocked market

Pumpkin Spiced Protein Muffins:
Yields 6 large muffins or 12 small muffins

1 cup pumpkin puree
1/2 cup brown sugar
1/2 cup maple syrup
1/3 cup oil of your choice (I used olive oil)
1/4 cup plant milk of your choice (I used unsweetened almond milk)
2 tbl flax meal + 6 tbl of water (combined and set aside for 5 mind to make flax egg)
1 tsp vanilla extract
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp ground ginger
1/4 tsp ground allspice
1 1/2 tsp pumpkin spice (you can use liquid or ground spice)
1/2 tsp sea salt
1 1/4 cup flour
1/4 cup vanilla protein powder (or any plant protein of your choice)
1 tsp baking powder
1 tsp baking soda

Crumb Topping:
1/2 cup flour
1/2 cup brown sugar (or any sugar you prefer)
1 tsp pumpkin spice (you can use liquid or ground spice)
1 tsp cinnamon
4 tbl of oil or melted vegan butter (add more to get desired “wet sand” consistency)

Vanilla Maple French Toast:
Yields 4-6 servings

1 loaf sourdough bread sliced thick (or whatever bread you prefer)
1 1/2 tbl ground chia + 3 tbl of water (combined and set aside to make chia egg, sub ground flax if you do not have chia)
2 tbl whole grain flour (or whatever flour you prefer)
1 cup of unsweetened vanilla plant milk (any plant milk will do)
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla extract
2 tbl maple syrup
1 1/2 tbl nutritional yeast (adding this ingredient does the job of a real egg in terms of taste)

Chai Spiced Pancakes:
Yield 6-8 pancakes

1 1/2 cups of whole grain flour (you can sub any flour you prefer)
1 tbl baking powder
Generous shimmy of cinnamon
1/2 tsp ginger
1/2 tsp allspice
1/2 tsp nutmeg
1/4 tsp sea salt
1 1/3 cup plant milk (I used unsweetened almond)
3 tbl of oil (I used olive oil)
2 tbl maple syrup
1 tbl apple cider vinegar
