  • Those veggies look awesome, I am going to have to give it a try.
    If you look into buying some beats from BakerCreek heirloom seeds, you can find a variety that is just like those purple potatoes and carrots. They would do good in your climate since beats like cold weather. The colors are amaizing too.

    Also I've made many a variation of Roasted Fall vegetables. And yes, Brussel Sprouts are always present because Brussel Sprouts are epic. I remember earlier in the year when I had a huge box of Sprouts and had to incorporate them into every dish. Good times.
