Green Smoothie Recipe

1.5 cups kale or spinach
1/4 water


add 1/2 or 1 banana, frozen
1/2 cup frozen mango
1 orange, peeled + deseeded if it has seeds
another splash of water


Vegan Tofu Scramble Recipe

1 block organic medium tofu
1/2 small onion
1 tsp garlic powder
1 tsp paprika
1 tsp turmeric
3/4 tsp tamari (I use low sodium)
3/4 tsp sea salt
1 tbsp nutritional yeast
black pepper to taste

Finely dice the onion, sauté with 3 tbsp of water until softened. Add spices, crumble in tofu, and stir in tamari and nutrional yeast.

Cook for 3 minutes or until well combined and warmed through. Taste to see if it needs more nutritional yeast, garlic, etc. Every spice is different so add or less to make it taste perfect to you 🙂

Serve warm with veggies and a side of toast, or make a breakfast sandwich using a slice of vegan cheese and some fresh spinach.

Purple Carrot’s Fabcakes Crab Cake Recipe

1 can chickpeas
1 stalk celery
1 jalapeño (I used a 1/4 of it)
1 tsp old bay seasoning
1/2 tsp salt, 1/4 tsp pepper (I’d go a little easy on the salt, Taste, then add more)
1/2 cup panko bread crumbs
1 can chopped hearts of palm

You Will Also Need:

1 avocado
1 orange
2 radishes
1 scallion

In a food processor, add chickpeas (rinsed and drained), celery, jalapeño, old bay seasoning, and 1/4 cup of the bread crumbs. Pulse until course and crumbly. Not toooo mushy.

Drain the hearts palm, pat dry, and add 1/2 to the mixture. Using a fork, mash together and from crab cakes. It says 6 in the recipe, I did 8 smaller ones.

Chill in fridge for 30 mins.

In the mean time combine avocado, orange, radish, scallion, in a bowl and stir to combine. Add remaining hearts of palm, salt and pepper, and set aside.

Use the remaining breadcrumbs to coat each crab cake and pan fry for 3-5 minutes per side.

Serve with salad and sautéed greens on the side. Or make into a crab cake sandwich! 🙂
